A group of students carried out an experiment to compare the effect of three carbohydrate sources on the rise in blood glucose level after simulated digestion. The procedure was as follows: 1. Prepare 100 mL of each carbohydrate solution: 5 % (w/v) glucose solution, 5 % (w/v) sucrose solution and 5 % (w/v) soluble starch solution. 2. Add 2 mL of α‑amylase (10 U mL⁻¹) to each tube and incubate at 37 °C for 30 min. 3. After incubation, cool the tubes and determine the glucose concentration of each sample using a calibrated glucose test strip (readings in mmol L⁻¹). 4. Record three independent readings for each carbohydrate source.
